How do I get to the settings menu in the camera view page to change my palette, choose single capture or capture confirm, choose Celsius or Fahrenheit, and turn on or off my hot and cold locators while I am taking my images?

Hold your finger anywhere on the view until the black square appears around your finger.  Your menu will be displayed down the left side of the tablet.
